ABSTRACT:
The paper is focused on the issues of ensuring high biological value and environmental purity of canned meat products for child nutrition, depending on a careful choice of raw materials, optimal scientifically substantiated formulation, and the use of the processing methods that ensure the maximum preservation of essential substances in the ready product. Based on the performed studies, it has been found that in the conditions of the Tambov region, it is possible to obtain ecologically safe raw meat materials for producing food for children. In terms of the absolute weight of boneless meat, steers of all studied genotypes did not have significant differences, the percentage of boneless meat to the weight of chilled half-carcasses varied from 77.5 to 81.5 %. The qualitative indicators of meat in all samples met the requirements of SanPiN and GOST 31798-2012. Beef and veal for infants nutrition, GOST 32224-2013. Meat and meat products for child nutrition, applied to meat raw materials. Meat had the optimum content of protein and fat, and could be used as a promising raw material for children nutrition.
